Stir Fry Recipe!!
Uncle Ben’s whole grain Instant brown rice.  I used Quinoa a lot.  You can make both like the back of the box says to.
2 skinless boneless chicken breast; trim fat and cut into cubes
1 onion
1 broccoli bunch
cut veggies in small pieces and keep separate
2 cans 8oz each pineapple tidbits in it’s own juice drained; drain juice into measuring cup and add water to make 3/4 cup liquid
1T corn starch
2T soy sauce, reduced sodium
Stir into pineapple juice
1T Canola or Sesame oil
1tsp minced garlic
1tsp ginger
Heat in skillet Add oil, garlic, ginger, meat, and onion.  Let brown for 4 minutes and stir in pineapple juice, stirring to mix
3 T slivered almonds or chopped Add pineapple, broccoli and nuts.  Cover and simmer for 3-4 min.  Serve while broccoli is bright green
1 cup stir fry and 1/2 cup rice is 365 cal./11 g fat/ 1.5g saturated/ 7g fiber/protein 21g
